

I first had this as a dinner appetizer @ Almond Restaurant on 22nd and Broadway. It was so delicious i had to come home and make it myself. If you are looking for a restaurant to try out, check out Almond! AND, make this yummy recipe @ home.
what you'll need:
- 1 lb of Asparagus
- 1 or 2 eggs
- 3 tablespoons of olive oil
- 2 tablespoons of parmesan cheese, grated
- 3 tablespoons of truffle oil
- salt & pepper
- 3 teaspoons of vinegar
Directions:
1. Preheat oven to 425 degrees
2. Put Asparagus on a baking sheet and drizzle w/ olive oil
3. Sprinkle salt and pepper all over asparagus
4. Roast for 10-12 minutes
5. Poach an egg or two! Boil 1 inch of water in a skillet and add vinegar. For more details on how to poach an egg, visit: http://www.wikihow.com/Poach-an-Egg
6. Place the poached egg(s) on top of the asparagus
7. Drizzle asparagus and egg w/truffle oil
8. Sprinkle egg w/grated parm cheese
Again, if you dont like truffle oil, you can remove from this recipe and it will still be delicious.
