So i just got back from my vacation in Costa Rica. I had so much delicious seafood there so there will definitely be a seafood series of recipes coming up soon! Look for an upcoming yummy ceviche recipe...thanks Javier! I will be whipping it together this week.
For today's entry, you'll find a low-fat "pizza" recipe, inspired by one that I read in a book titled, "Hungry Girl, 200 under 200". It really is under 200 calories! Why the low fat recipe you ask? This is because I ate alot during my Costa Rica vacation...and also had alot of sugary cocktails. However, I must say, although it is low fat, it is delicious and super easy and quick to make! Give it a try. My recipe below has garlic and red pepper flakes for some spice, but you can really play with the recipe and add any other toppings you like!
ingredients
8-14 inch tortillas (flour, whole wheat, spinach, whatever)
1 cup tomato sauce
1 cup ricotta cheese
2-3 cloves of garlic - chopped/mashed
salt/pepper to taste
dash of red pepper flakes
tablespoon of olive oil
dash of oregano
1/4 cup of low-fat mozzarella/other fav shredded cheese
2-3 basil leaves
1. Preheat oven - 350 degrees
2. Pour olive oil on tortilla and bake in the oven for 4 minutes on each side
3. Mix the ricotta cheese with garlic, red pepper flakes, oregano, a little bit of salt and pepper to taste
4. Take out tortilla and spread a layer of tomato sauce on top
5. spread ricotta mixture
6. top with shredded cheese
7. top w/ basil leaves
8. bake for 8-10 minutes until tortilla is crisp and cheese is melted
done!! (im not gonna lie, if i had pepperoni, it would have gone on top of the "pizza")
