Spinach & Ricotta Lasagne



I went to the San Gennaro festival in Little Italy last night and it left me with a huge craving for italian food....and deep dried oreos but, i'm going to leave that to the experts =)

Lasagne is one of my favorite dishes. I have been making lasagne ever since I was little. Usually I make it with meat and tons and tons of cheese, obviously, but, today I am trying a vegetarian version. This recipe is also a good way to get in your greens! Popeye would like this meal. Give it a try! 

Ingredients:
  • Oven ready Lasagna noodles
  • 1/2 cup of ricotta cheese
  • 1 cup of shredded mozzarella cheese
  • Fresh spinach or a box of frozen spinach
  • 1 egg
  • 1 tablespoon of butter
  • 1 shallot, finely chopped
  • 1/4 cup of parmesan cheese
  • 1 cup of tomato sauce
  • 1/cup of basil pesto
  • salt and pepper to taste
Directions:

1.) Preheat oven to 350ºF.
2.) Cook the spinach over medium heat. Drain and cool.
3) Mix the spinach, ricotta, parmesan cheese, pesto, and salt & pepper in a bowl. Stir in egg!
4) Spread some tomato sauce at the bottom of a baking dish. Cover the bottom of the dish with lasagna noodles. Spread with alittle tomato sace and spread spinach mixture on top. Spread mozzarella cheese. 
5.) Add more tomato sauce and repeat step 4 all the way to the top until you're out of noodles! then cover with last layer and top with mozzarella cheese.
6.) Cover with foil. Bake for 45 minutes and then take off foil. bake for 10 to brown the top. 
7.) Let rest for 10 minutes before serving.
